Vegetables With Peanut Butter Make The Perfect Healthy Snack

Rice paper is one of those items to always have in your cupboard. Literally any kind of vegetable with some peanut butter and soy sauce, rolled up in rice paper, tastes amazing. Vegs/summer rolls are perfect for left-over vegetables (that one carrot left has a purpose now), are easy to make, taste like you’re a chef, are super versatile, and are healthy too!

Filling Options

Vegetables:

  • Pepper (red, yellow, orange)
  • Carrot
  • (Red) cabbage
  • Broccoli / Cauliflower (steam first)
  • Bok Choy
  • Avocado

Herbs

  • Coriander
  • Basil

“Grains” & Legumes:

  • Quinoa
  • Rice / Rice noodles
  • Lentils
  • Chickpeas

Sauce Options

  • Soy Sauce
  • Sweet Chilli
  • Peanut butter (dilute with water)
  • Tahini (dilute with water)

How To Roll

  • Put the rice paper on a (wooden) cutting board, hold both from the top, with one hand, and place vertically under running hot water until the paper feels soft, then remove
  • Place a small quantity (!) of filling near the bottom of the paper
  • Fold in the sides of the paper
  • Start rolling from the bottom, till the top
